A Lighter Tastier Chocolate Chip Cookie

I have a pretty major sweet tooth. I will not deny this fact. I love baked goods. If you ask my housemates, they will tell you I'm an addict constantly whipping up something sugary and fattening. The worst part is, as soon as said baked goods come out of the oven, they are consumed whole by my accomplice (Dan) and myself. It's bad, I know it. That being said, I have however been working for many years on my recipes coming up with nifty little tricks to reduce the fat & sugar, as well as add fiber, to my baked goods. I figure, if I'm not willing to give up on eating these tasty morsels, I might as well make them better for me.

This Chocolate Chip Cookie recipe drops the fat down less than half and cuts the sugar by a third (compared to traditional Toll house cookie recipe). The coconut oil ads a delicious subtle flavor, and along with the applesauce, helps cut the cholesterol down to only 1/4 that of the original recipe. The applesauce and oats help add healthy fiber. You will love them!

Ingredients
*2 cups all-purpose flour (can use 1/2 whole wheat flower if you have it)
*1/3 cup rolled or quick oats ( can be whole or ground to a flour)
*3 tbsp ground flax seeds (optional)
*1 teaspoon baking soda
*1 teaspoon salt
*1/4 cup (1/2 stick) butter, softened
*1/4 cup extra virgin coconut oil
*1/4 cup applesauce
*1/2 cup granulated sugar
*1/2 cup brown sugar
*1/8 tsp stevia
*1 1/2 teaspoon vanilla extract
*1 large egg
*1+ cups of chocolate chips

PREHEAT oven to 375° F.

COMBINE flour, oats, flax baking soda and salt in small bowl.
Beat butter, coconut oil, applesauce, sugars, stevia, egg and vanilla extract in large mixer bowl until creamy.
Gradually mix in flour mixture. Stir in chocolate chips.
Drop by rounded tablespoon onto greased baking sheets.

BAKE for 9 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

  1. Omg, I wish I had Stevia and the coconut oil, I would try these tomorrow with my son, whom I promised to make cookies tomorrow. If I don't have Stevia or the oil, would you say to substitute with Canola oil and add a little bit more sugar?

  2. If you don't have the stevia add 1/3 cup more sugar. For the coconut oil, replace it with another 1/2 stick of butter so you will be putting in a whole stick of butter to the recipe.
