Fig Ginger Jam Recipe - Guest Post

There has been some interest in the Fig Ginger Jam I mentioned the other day so I got my mom to do a guest post to give out the recipe. Enjoy:

"I have used this recipe several times and the results always come out well. When you have a fig tree you always have more fresh figs than you can eat and this is a good way to put them up for use later in the year.

What you will need: 2 quarts chopped fresh figs, 3/4 cup water, 6 cups sugar, 1/8 cup graded ginger, 1/4 cup lemon juice
To prepare figs: Pour boiling water over figs, let stand 10 minutes, Drain, stem and chop figs.
To make Jam: Sterilize canning jars. Measure and add 3/4 cup water and sugar to figs. Slowly bring to a boiling, stirring until sugar dissolves. Cook rapidly until thick. Add ginger, stir frequently to prevent sticking. Add lemon juice and cook 1 minute longer. Pour hot jam into hot jars, leaving 1/4 inch headspace. Wipe jar rims and adjust lids. Process 5 minutes in a boiling water bath or steam bath caner.

  3. I made a batch - got four and a half pints of jam out of it, and it is great - thinking of using some of it to glaze a pork-chop :).
