Gluten Free Berry Banana Bread


As another treat in my best friend Misty's graduation gift basket I made this Gluten Free Berry Banana Bread.
I searched though a ton of recipes and pieced together my own to create what I consider the perfect recipe. The bananas were from the "extremely ripe so we are discounting them" section at my local grocery store that I mentioned in an earlier post. The berries were foraged locally from bushes just blocks from my house.

This recipe can be used with regular or gluten free flour. I've used both and they both work great.

Berry Banana Bread
1.5 cups flour (I used Bobs Red Mill Gluten Free Flour)
1 tsp baking soda
1 tsp baking powder
pinch of salt
3 very ripe bananas
1/4 cup milk
1 tbsp vanilla extract
1/4 cup sugar
2 eggs
1/2 cup whole berries

Preheat oven to 350. Mix together the flour, baking soda, baking powder, and salt. In a food processor or blender mix together bananas, milk, vanilla, sugar, and eggs. Pour the liquid mixture in with the dry mixture and mix well. Pour batter in greased baking pan. Drop in berries on the top of the batter then press down gently so each one is just covered with batter. Bake for approximately 30 min or until a fork or tooth pick stuck in to the loaf comes out clean.
