Last of the Avacados

This past Christmas was spent with my parents in Southern California where they have a glorious back yard of fruits and veggies. As every good mother does, mine sent me home with a large bag full of food including 8 beautiful avocados from the tree in their backyard as well as some I foraged from a small grove in their neighborhood. I used most of these babies to make some kick ass guacamole a few days back but saved one.

Today's lunch: "Last of the Avocados" Sammie

I sliced up some of my home made Nutty Oat Bread I posted about a couple of days ago, spread on half the avocado, layered with sliced up onion and some of the mustard greens I foraged a few days ago from Peoples Park. Then I squeezed on some lime juice and a sprinkle of salt n peppa. So good!

Quite a simple yet satisfying lunch. I believe I might do the same tomorrow with the other half of "The last of the Avacados".

  3. I loooove avocados so much!! This sandwich looks really good, though I don't usually like bread with nuts or seeds or any time of texture in it. However, I'm really impressed you made your own bread. :)
