Homemade Calzone - the perfect meal for left overs

I, like any normal human being, LOVE pizza! I also love convenient easy to handle packages. Enter "The Calzone".

I'm always trying out new recipes and often "healthing them up" as I go. For this recipe I added ground flax seeds to the crust, and stuffed it full of veggies. I used a bunch of chopped veggies I had left over from last nights meal. I often chop much more vegetables than I need and use the rest to make meals go quicker the rest of the week.

Here it is "Girl on Bike's Healthy Calzone"
Crust:
  • 1 cup luke warm water from your tap
  • 2 1/2 teaspoons sugar or honey
  • 1-2 tablespoon olive oil
  • 3 cups white or whole wheat flour
  • 2 1/2 teaspoons salt
  • 1 teaspoon yeast
  • 1/4 cup ground flax seeds
Dissolve the sugar and yeast in the water, wait 5-10 min for the yeast to get foamy. Add oil, salt, flax seeds and flour. Mix till dough comes together and leaves the sides of the bowl. Turn out onto floured surface and knead 5 minutes. Place in oiled bowl and cover with plastic wrap. Allow to rise for 1 hour in warm location. Place dough on a lightly floured surface and sprinkle flour over the top. Working from the edges to the center, press dough into a large circle.
Filling:
Spread half the circle with a thick layer of red sauce (any store bought will work fine or you can make your own)
Top with about 1 cup of your favorite veggies
Sprinkle with enough cheese to taste (I use about 1/2 cup shredded cheese)

bake in a 400 degree oven for 30 minutes.

***This baby is big, you may want to share or split the dough in half before making the circles and make two smaller ones.

  1. looks yummy! We often use ground flax seed in our pizza dough. It adds a nice texture too :)

  2. A girl after my own heart. I love pizza.If I could have what I want I would weigh 600 pounds in no time.
    I knead mine in the bowl in which I mix and cover with a damp dish towel. I don't much like plastic.
    I see you use ground flax as I do. Try oat bran but not too much or it gets gummy. I only use two tablespoons for a loaf of bread. Caraway is nice too. Now I'm hungry.

  3. One of our favorites at home - just made it Saturday. We actually make strombolis - a calzone without ricotta. That is what they were called back in Philly anyway.
